In January 2023, students from the Masters in Innovation in Culinary Arts and Sciences and in Food Design will visit the NOMA restaurant of starred chef René Redzepi. The NOMA restaurant, currently with 3 Michelin stars, has been in business for 20 years.
With its origins in the exploration of the natural world, it was born out of a desire to rediscover wild local ingredients through seasonality and foraging.
This is a unique opportunity for our students, who in previous editions have visited Heston Blumenthal's The Fat Duck restaurant or the Roca brothers' El Celler de Can Roca in Girona.
