Teacher and Alumni honoured at Michelin Guide: Spain & Portugal 2023 gala

The presentation of the Michelin Guide Spain & Portugal took place on Tuesday 22nd November at the Palacio de Congresos el Grego in Toledo.


Amongst the announcement of the new Portuguese winners, Japanese cuisine was honoured with one of the distinctions going to the Kanazawa restaurant and the team of chef Paulo Morais, a lecturer at the Estoril Higher Institute for Tourism and Hotel Studies (ESHTE), who has been working with Japanese-influenced cuisine for over 30 years.

 

Also with a green star, reflecting its commitment to more sustainable gastronomy: the Mesa de Lemos restaurant in Passos de Silgueiros (Viseu) which, with chef Diogo Rocha, an alumnus of the Food Production in Catering degree programme at the Estoril School of Hospitality and Tourism, has held a Michelin star since 2019.
