On May 13th, innovative products developed within the partnership between the Estoril Higher School of Hotel and Tourism (ESHTE) and the company Lactalis were presented. The initiative involved students of the Master's in Food Safety and Quality in Catering, under the guidance of Professor Rafael Santos.
The students applied the knowledge acquired throughout the course in a practical context, developing innovative desserts and sauces using Lactalis brand products, used as raw materials.
Representatives from Lactalis, Professor Rita Peres, coordinator of the Research, Development, and Innovation Center (CIDI) responsible for this project, and Professor José Pestana, course coordinator and responsible for the Research and Scientific Dissemination Center at CIDI, attended the session.
During the presentation, the students detailed the entire product design and development process. The session culminated with a tasting session, where participants were able to try the creations presented.
This initiative clearly demonstrated the value of skills acquired in an academic context and their relevance for the professional future of students, demonstrating the importance of collaboration between higher education institutions and companies in the food sector.
