18th century recipes reinterpreted by MIACC students

The ReSEED project team challenged the students of the eighth edition of MIACC to reinterpret the recipes recorded by Francisco Borges Henriques in Receitas dos milhores doces e de algũns guizados particulares e remedios de conhecida expiriencia que fez Francisco Borges Henriques para uso da sua casa - "one of the rare documents that amply reveals how, in Portugal, the cuisine of the late 17th century and the first decades of the 18th century was changing".

 

This collaboration took place as part of the project "Times change, wills change?", which began in the 2019/2020 school year. Now comes the publication of the work carried out under the coordination of Dulce Freire, Maria José Pires and Ricardo Bonacho

 

This was the starting point: "Hundreds of 18th century recipes and two questions: how to cook them in line with today's requirements for healthy, tasty and sustainable food? How to bring to the table recipes that have been locked away in a manuscript for 300 years?"
