Some of the best cocktails and drinks in Lisbon!

Four technical visits to Portugal's most awarded bars took place on 19 March as part of the Wine and Drink Pairing course unit of ESHTE's Masters in Innovation in Culinary Arts and Sciences. Starting at the Rossio Gastro bar, part of the Altis hotel in Rossio, they were welcomed by head barista Flávia Andrade, who has won multiple awards in her field. They tasted various cocktails inspired by the flavours of Lisbon, and always with a story attached, either in their creation or in the origin of each flavour and ingredient.

This was followed by a visit to the Monkey Mash, a fresher, more alternative and Latin bar with a tequila mescal flavour that belongs to the same owners as the prestigious Red Frog, which was also visited with access to advanced machinery - such as a rotary evaporator, centrifuge, cold pressure, ultrasound probe, low-temperature baths, vacuum, dehydrators, among many other machines that take the quality served in this bar to the best in Portugal - which puts it on the list of the 50 best bars in the world. The visit moved on to the Bistro Cem Maneiras restaurant run by the famous chef who has a TV programme called Cozinha do Diabo (Devil's Kitchen), with gastronomic tastings and the development of cocktails and drinks with bolder and more differentiated calculations. Belonging to the same management, the students visited the Mexican restaurant Carnal and tasted three cocktails. This eight-hour visit was led by Rui Mota, the lecturer in charge, and offered the students different creative imputes for future application in the MIACC transversal project.
