MIAC visits El Celler de Can Roca and Fundació Alícia

MIAC - MSc in Innovation in Culinary Arts paid a visit to El Celler de Can Roca and La Masia (Research Center of what was once considered the best restaurant in the world with 3 Michelin stars). During the visit, students got acquainted with the philosophy, mission and values ​​associated with one of the best restaurants in the world, and had the opportunity to get to know the restaurant, the kitchens and the way menus and wine lists are developed. The visit was led by Heloïse Vilaseca (director of La Masia). It was also possible to know how the three brothers Roca (Joan, Jordi and Josep) value sustainability by recycling and using local products in their menus - including from their food garden.

 

Following the visit to Girona (El Celler de Can Roca), the students also visited the Alícia Foundation (Ali-mentació and cièn-cia), a research center dedicated to innovation in Culinary Arts. Here students could better understand how interdisciplinary research works in the area of ​​food and food development.
