Festival do Ouriço do Mar contou com a presença da ESHTE

Last Saturday, March 16, ESHTE was present at the 8th edition of the renowned International Sea Urchin Festival, held at the picturesque Ericeira Municipal Market on the initiative of Mafra Town Council. Visitors had the opportunity to enjoy a live cookery show and taste a variety of delicacies from the waters of Ericeira. Students from the Masters in Innovation in Culinary Arts and Sciences (MIACC), Diogo Alves, José Santos, Lívia Alfenas and lecturers Gilberto Costa and Rui Mota, presented a sophisticated menu. Among the delicacies, highlights included sea urchin foam, coriander caviar, citrus-infused olive oil and chlorella and mint sponge cake, cured mackerel with citrus and coriander seeds, yuzu fluid gel and mizuna sprouts, which provided a unique gastronomic experience. This participation in the festival not only praised local gastronomy and the region's marine products, but also highlighted the talent, creativity and academic excellence of the members of the ESHTE community in the field of cookery and gastronomic innovation.
